Boon Geuze Mariage Parfait is a traditional, unfiltered “Oude Geuze”. The name “Oude Geuze” is a EU protected name that guarantees a superior quality, much like the “Champagne” name. To make an Oude Geuze, you do not just brew a beer. The process is very complex and takes many years. It starts by brewing Lambic, which is a spontaneously fermented beer that is aged in oak casks called Foeders. By aging the Lambic in these Foeders for up to 3 years, each cask giving its own character to the beer, it becomes a mild sour beer with a rich palette of aroma’s. For Boon Geuze Mariage Parfait, 95% smooth 3 year old Lambic and 5% young 1 year old Lambic is being blended. The young Lambic delivers sugars and yeast so the fermentation process can continue inside the bottle. The bottle will be kept in the brewery for at least another 6 months to give the beer additional aging to develop the distinct taste of Boon Geuze Mariage Parfait. Many flavors of citrus and wood (vanilla, oak, clove) that are reminiscent of whiskey dominate the taste. Additionally, the taste of young apples and a wine-like sourness guarantee a fresh aftertaste. Just like a good wine you can store Boon Geuze Mariage Parfait for several years to enjoy an advanced taste.
