Duivelsbier Wild is bottle-refermented with Brettanomyces, also known as ‘Brett.’ This yeast gives the beer its characteristic fruity aroma, which is also reflected in the taste. A subtle hint of apricot is beautifully balanced by a refreshing hoppy character and a soft bitterness. The beer has a pleasant malt profile, while dry-hopping provides a pronounced hop aroma from noble, non-bitter European hops. The Brett character is finely integrated into these hop aromas, resulting in a complex and rich flavour experience. Duivelsbier Wild is, therefore, a true “Brett beer” fermented with yeasts typically found in the wooden walls of Brewery Boon’s beer barrels. These yeasts thrive in lambic barrels and are the only surviving yeasts in this microclimate. For Duivelsbier Wild, Boon carefully selected a Brett yeast from one of their oldest wooden lambic barrels. Feel free to let a bottle of Duivelsbier Wild age for a few months (or years). The yeasts in the bottle facilitate a slow maturation, gradually bringing the beer into further balance. Over time, the beer softens, and the Brett character becomes more pronounced, blending beautifully with the hoppy profile.
