オルヴァルには、少しの酸味からくる程良い苦みがあります。またドライホッピングのプロセスでたくさんのホップを使用することからくる苦みとフローラルな香りもあります。 適度な酸味は、野生酵母のBrettanomyces Orvaliensisに由来します。 その酵母によってとてもドライな後味になり、それが飲みやすさにつながっています。 何よりも、オルヴァルは時間とともに熟成するビールです。 醸造後、醸造所で6か月間保管され酵母が働き続けます。 セラーから出た直後に飲むと、圧倒的なホップの苦味を感じますが、寝かせると、瓶内で発酵を続け少し柔らかで丸い口当たりの落ち着いた苦味になります。 手にしたオルヴァルがフレッシュであれ熟成させたものであれ、このようなビールは他にありません。
World famous “beer hunter” Michael Jackson was once asked by a Japanese journalist which beer he would drink if he only had 15 minutes left to live. His answer was clear: Orval.
The reason for this answer was the authenticity of the Trappist beers (beers brewed within the walls of an abbey), and among those Trappist beers the originality and uniqueness of Orval.
Orval is not a blond beer nor a dark beer, but amber colored; maybe even a little bit orange. The brewery only produces 1 beer according to a recipe that has not been changed since 1931. The glass, the coaster, the logo: everything about this beer is immediately recognizable. As is the taste.
Orval has a bitter taste complimented by some slight acidity. The bitterness and the floral aroma come from the ample use of hops, partly used during a dry-hopping process. The modest sourness can be traced back to the use of wild yeast, Brettanomyces Orvaliensis. The wild yeast is also a major factor in the very dry aftertaste of Orval and thus its drinkability.
Most of all however, Orval is a beer that matures with time. After brewing the beer, it is stored for 6 months at the brewery so the yeast can keep on working undisturbed. When you immediately drink your Orval after it has left the cellars, you will mainly experience an overwhelming hop bitterness. The longer you wait to open your bottle though, the yeast will continue to take care of the refermentation in the bottle resulting in a little bit softer and rounder mouthfeel and a more subdued bitterness.
Whether you drink your Orval young or old though, there is no other beer like it.
