Collaboration brew with Brasserie De La Senne.
Drie Fonteinen Brewery specializes in artisanal lambic beers and prides itself on its cooperation with local farmers and communities, achieving recognition as a bio-brewery.
As they work with spontaneous fermented beers, they are adamant that no brew is the same, and that is exactly the beauty of their trade.
“Terf” was first brewed in July 2020. This local wheat beer was concocted by Brussels-based Brasserie de la Senne using old wheat varieties from the cereal collective of 3 Fonteinen Brewery. Part of the brew was immediatly drawn onto small bottles and sold out in no time. Another part of the brew matured further for three years in oak lambic barrels. In November 2023, this ‘matured’ Terf was mixed with young lambic to get the fermentation starting again. The beer that was thus created was called “Wild Terf” and is the fruit of collaboration between brewers and local farmers, with a fair income for the farmer. Above all, it is an ode to the historical agricultural link between the countryside and Brussels.
